Green Tea Madeleines
Yes Proust's favorite Madeleine but we add green tea.
Ingredients needed: 1 Tble Matcha Green Tea 2 extra large eggs, beaten 2/3 c sugar 1 c all-purpose flour, dry measure 1 stick (4oz) unsalted butter plus 1 1/2 Tble for pans pinch of salt 1/2 tsp vanilla extract grated rind of 1/2 lemon 3-5 drops lemon juice
For buttering pans: 1 1/2 Tble melted butter and 1 Tble flour 2 Madeleine pans each with 12 depression 3 in. long.
Measure 3/4 of the eggs into a mixing bowl with the sugar and flour, beat with a wooden spoon to blend into a heavy cream. Set aside for 10 minutes.
Melt butter in a saucepan, let boil until light golden brown.
Blend 1 1/2 Tble of butter with 1 Tble flour and set aside. Cool remaining butter over ice to retain congealing.
Stir the remaining egg into batter with cooled butter. Add salt, vanilla, grated lemon rind, lemon juice, and matcha, Cover and set aside for 1 hour.
Preheat oven to 375F
Brush Madeliene pans thoroughly with the butter and flour mixture.
After an hour or so the batter should be fairly thick. Using a spoon, place a generous Tble of batter into each Madeliene shell and do not spread the batter out in each shell. Bake for 15 minutes. Batter will spread out into the shells during baking and produce a hump in the middle. Sure sign Madelines are finished, the edges will be golden brown and pulled away from the molds. Unmold unto a rack.
To store, keep in an airtight container.
